Most Indian restaurants in Britain were opened by families from Sylhet, in north-east Bangladesh. Very few say so on the menu.

Sylheti cooking leans on mustard oil, fresh green chilli and a sharper, thinner gravy than the creamy dishes it usually gets folded into. We serve it as its own thing — chicken or lamb — alongside a twenty-two dish chef's signature list including baraka, shatkora, zafrani and uree preparations.
