A balti is cooked fast in a flat-bottomed pan over high heat, so the sauce reduces and thickens rather than simmering — sharper and more concentrated than a slow-cooked curry. Fish balti and king prawn balti sit alongside tandoori lamb chops off the grill.

Gulab jamun — warm milk dumplings in cardamom syrup. Kulfi, denser and slower to melt than ice cream. Rasgulla, light and soaked in syrup. All three travel well and arrive with the rest of the order, not after it.
