Kerala food is built on coconut, curry leaves, mustard seeds and tamarind rather than the cream and tomato base of a standard curry-house menu — and it's rice-led rather than bread-led. Dish names here reference actual places in Kerala: Kottayam egg fry, Cochin squid, Alappuzha prawn masala.

Kozhi kurumulagu is a black-pepper chicken from the Travancore region. Cheera erachi is lamb cooked with fresh spinach and turmeric. Tilapia pollichathu is wrapped in banana leaf and steam-cooked. None of these are on a typical UK Indian takeaway menu.
